These Mexican that are copycat Taco Bell Mexican pizza have only 400 calories and can be made in less than 20 minutes.

I used to adore getting the Taco Bell Mexican Pizzas after work at Taco Bell while I was in high school. I’m not sure what it was, maybe the tortillas’ crispness and the combination of cheese and enchilada sauce? Whatever it was, I was always affected by it. These pizzas are fantastic, but I wanted to transform them into something healthier.

Refried beans are the only ingredient in my healthier version of the dish (check out this fantastic refried bean recipe), and let me tell you, it tastes EXACTLY like Taco Bell’s Mexican pizza. In fact, I think it tastes better. It would be simple for you to toss some ground beef or ground turkey in there if you aren’t a vegetarian. For the ideal supper, serve them with a side of Mexican Street Corn salad  for the perfect meal!

How to make Taco Bell Mexican Pizzas

Prepare and gather all of the materials.
Set the oven’s temperature to 400. Cooking spray should be used to coat a hot skillet or griddle. Fry the tortillas there, rotating them regularly to prevent burning. You desire them to become nicely crispy. Place the plate with the fried tortillas.
Refried beans should be warmed up. On a baking sheet, arrange 2 tortillas. Each tortilla should have 12 cup of refried beans on it. Over the beans, arrange the remaining tortillas.
